Turkey Leftovers Soup
If you are looking for a creative way to use up all those of turkey leftovers then you will love this soup. This actually tastes even better the second day. Serve turkey leftovers soup with a nice crusty bread or hot rolls and round out the meal with a salad.
Turkey Leftovers Soup
* 1 leftover turkey carcass
* 2 large or 3 medium onions, chopped
* 2 large carrots, diced
* 2 celery ribs, diced
* 1 cup butter, cubed
* 1 cup all-purpose flour
* 2 cups half-and-half cream
* 1 cup uncooked long grain rice
* 2 teaspoons salt
* 1 teaspoon chicken bouillon granules
* 3/4 teaspoon pepper
Place turkey carcass in a large pot or Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for about an hour. Remove carcass and let cool. Set aside 3 qt. broth. Remove turkey from bones and cut or shred into bite-size pieces; set aside.
In a large pan, saute the onions, carrots and celery in butter until tender. Reduce heat; stir in flour until blended. Gradually add 1 quart of the reserved broth. Bring to a boil, stirring constantly. Cook and stir for 2 minutes or until thickened.
Stir in the rice, salt, bouillon, pepper, remaining broth and reserved turkey. Reduce heat; cover and simmer for 30-35 minutes or until rice is tender. Add cream and continue heating (do not boil) until soup is heated through.
Makes approximately 16 servings
Tip: You can use less butter if you are uncomfortable using a whole cup however, make sure you adjust the flour accordingly. The soup will still be quite thick even with less flour. You can also vary the vegetables such as adding corn, extra carrots etc. This soup is the perfect comfort food to serve
